Fill a cocktail shaker with ice cubes and pour over 40ml vodka, 15ml cranberry or pomegranate juice and 50ml of rhubarb puree (see below).

  • Shake well and pour into a chilled martini glass. If you want to be fancy, dip the top of your glass in water and then into a shallow bowl of caster sugar to create a sugared rim. Leave to set before you pour your drink.
  • Serve with a garnish of lime and raspberries.

Rhubarb puree:

  • Take 250g of rhubarb cut into chunks and place in a saucepan with 115ml of water and 110g of caster sugar. Bring to the boil and then reduce the heat and simmer gently for approximately 15 minutes or until the fruit is soft and the liquid has thickened. Puree until smooth. Makes around 400ml.
