500g oats
300g walnuts
360g grated coconut
140g pistachios
200g flaked almonds
400g Demerara sugar
240g honey
140g golden syrup
220g butter
160ml oil
zest of one orange
splash of vanilla essence

Method:

1) Melt the butter, sugar, honey and syrup and stir in the remaining ingredients.

2) Spread out on to a baking sheet lined with baking paper and place in oven (180C/Gas Mark 4/160 fan) for 10 minutes or until it begins to turn golden.

3) Remove from oven and stir with a fork to turn the mix.

4) Return to oven and when the mixture is uniformly golden, remove.

5) When cold, break up into small pieces by bashing with a rolling pin (good 2022 stress remover) or blitzing very quickly in a food processor.

6) Put mixture in an airtight jar. And then hide it.

Mark's Famous Granola BARS

225g porridge oats
2.5 tsp cinnamon
400g nuts, sunflower seed, sultanas
360g peanut butter
250ml maple syrup

  • Melt peanut butter and syrup, mix in all other ingredients thoroughly.
  • Push down flat into baking tray lined with greaseproof paper, flatten as much as possible.
  • Leave in fridge to firm up, overnight if possible.
  • Cut into small bars. EAT!
