Classic French Patisserie with Mark Mitson

The thought of Paris conjures up visions of perfect pâtisserie windows filled with glistening tarts, fruit-studded financiers, perfect pastries and glorious gateaux. French pâtisseries reign supreme and Mark Mitson is ready to share the secrets from his recipe book with you.

Mark will be showing you how to make his signature Gateau Opera, Pithivier, tarte tatin, palmiers and blueberry financiers in order that you can add some je ne sais quoi into your baking!

Mark Mitson is Head of Pastry at The Assembly House and the official Scone Jedi. He has spent his career making cakes, Viennoiseries and desserts. After training in the UK and in Switzerland, Mark worked at a number of West End hotels including the Hilton Park Lane (where he was chased by a furious French pastry chef brandishing a rolling pin!), the Mayfair Intercontinental and he was Head Pastry Chef at Claridge’s Hotel.

He worked for Albert Roux in Amsterdam, and has cooked for a formidable list of clients including the former Queen and her mother, the Queen of Pop Madonna, the Queen of Soaps, Joan Collins, the Queen of Romance, Barbara Cartland and the Queen of Cookery, Delia Smith!

You’ll be given expert tuition and recipe sheets with step-by-step instructions as you cook at your own work station on a central aisle. Once the hard work is over, it’s The Assembly House team’s turn to serve you afternoon tea, as you relax and reflect with your fellow students over a glass – or two - of wine!

Students arrive at 9.30 am and after a short introduction, head into the kitchen. After the hands-on class, one of The Assembly House’s famous Afternoon Teas follows and the day ends at 3pm when you can collect the goodies you’ve made, head off home and take credit for your fabulous work!
