Baking and Pastry with Samantha Wegg, Benedicts

New for 2024! We are delighted to welcome the legendary Dr Richard Bainbridge, Head Chef Ashley Williamson and R. Bainbridge Provisions and former Morston Hall Head Chef Sam Wegg to The Richard Hughes Cookery School for a series of Hands-On Masterclasses. We are honoured, proud and extremely excited to welcome the team from Norwich’s most celebrated restaurants to our teaching kitchen!

Norfolk chef Sam Wegg worked at Michelin-starred Morston Hall for Galton and Tracy Blackiston for 17 years, working her way up to Head Chef. She now works with close friend Richard Bainbridge and his wife Katja at Benedicts, focusing on provisions.

Sam will showcase her baking and pastry prowess with a variety of ideas for canapés, starters, main courses and desserts, from brioche to puff pastry and beyond.

This is a class that will pep-up your proficiency in baking and strengthen your confidence in using pastry across a range of dinner party menus! Cook along with Sam in the bespoke teaching kitchen!

Students arrive at 10 am and after a short introduction, head into the kitchen. After the hands-on class, you’ll be taken for lunch cooked for you by The Assembly House and the day ends after you’ve eaten when you can collect the food you’ve made, head off home and take credit for your fabulous work!
