1 roasted red pepper (skinned and seeded)
1 small can chopped plum tomatoes
1 dessertspoon white wine vinegar
1 dessertspoon of caster sugar
1 clove garlic, crushed
touch of fresh chilli (optional)

·        Roughly chop the red pepper and place in a thick bottomed saucepan with all the other ingredients.

·        Simmer for 20-30 minutes on a low heat, driving of all the liquid.

·        Cool and season.
