Preheat oven to Gas Mark 5/190°C
¼ cup of cold strong Earl Grey tea
225g self-raising flour
100g caster sugar
4 tbsp milk
Soak the dried fruit overnight in the tea.
· Grease and line a 450g loaf tin.
· Sift the flour.
· Add the sugar.
· Add the milk and the egg, and beat well.
· Add the fruit and the tea.
· Turn into the buttered floured loaf tin.
· Bake for approximately 45 minutes until cooked through.
· Turn out into a wire rack.
· Allow to cool, wrap in foil and leave to stand overnight.
